Ingredients

  • 12 slices white sandwich bread
  • 2 medium carrots, grated
  • ½ small white cabbage, finely shredded
  • 1 cucumber, finely chopped
  • 4 green onions, finely chopped
  • 8 oz cream cheese
  • ½ cup mayonnaise
  • 2 tbsp sour cream
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh parsley, chopped
  • 2 cucumbers, for garnish
  • 2 carrots, for garnish
  • 1 bunch green onions, for garnish
  • Fresh cilantro, for garnish

Cooking Instructions

  1. 01

Grate the carrots and cabbage, then finely chop the cucumber and green onions.

  2. 02

Place all the prepared vegetables in a large bowl.

  3. 03

Add the cream cheese, mayonnaise, sour cream, minced garlic, lemon juice, salt, black pepper, cilantro, and parsley.

  4. 04

Mix everything thoroughly until the vegetables are evenly coated with the creamy dressing.

  5. 05

Trim the crusts from the sandwich bread to create neat rectangular slices.

  6. 06

Place a layer of bread on a rectangular serving platter.

  7. 07

Spread an even layer of the creamy vegetable mixture over the bread.

  8. 08

Add another layer of bread and gently press it down.

  9. 09

Continue layering the bread and vegetable mixture until all the ingredients are used, finishing with a layer of the vegetable mixture.

  10. 10

Smooth the top and sides with a spatula to create an even rectangular shape.

  11. 11

Refrigerate for at least 1–2 hours so the layers become firm and easy to slice.

  12. 12

Decorate with cucumber ribbons, carrot roses, green onions, and fresh cilantro.

  13. 13

Carefully slice into neat portions and serve chilled.

Chef notes

- Use soft, fresh sandwich bread for clean, even layers. - Squeeze excess moisture from the grated cabbage, carrots, and cucumber to prevent soggy bread. - Let the cream cheese soften before mixing for a smoother filling. - Spread the vegetable mixture in an even layer so the cake holds its shape. - Press each bread layer gently without compressing it too much. - Chill for at least 1–2 hours before decorating and slicing. - Use a sharp serrated knife to cut neat slices without crushing the layers. - Prepare the cucumber and carrot decorations just before serving for a fresh appearance. - Keep the finished sandwich cake refrigerated until ready to serve.
